Chef Andy will break down common misconceptions about chicken and explain why sourcing matters—not just ethically, but gastronomically.
Guests will then witness (and learn) the art of proper protein breakdown. Chef Andy demonstrates how to expertly break down a whole chicken with precision and respect, maximizing yield while minimizing waste—an essential skill rooted in both sustainability and classic culinary technique.
From there, the focus shifts to transformation. Using thoughtful, simple techniques designed to highlight the integrity of the ingredient, Chef Andy prepares a beautifully balanced dish that proves gourmet cooking doesn’t require excess—only intention, skill, and outstanding ingredients.
