Casual Cuisine is a new class I’ll be teaching twice a month on Tuesday nights. The menu will focus on easy weeknight meals that are full of flavor yet not take hours to prepare. Each class you will learn some basic knife skills, cooking techniques, and tricks of trade to make cooking fun and easy. Most classes will be full participation yet there might be come exceptions due to time constraints. I hope you will join me for a fun night out with friends and leave class with new ones.
I’ve had these marinade recipes for many years, they are a tired and true sauce for Chicken breasts with skin on & bone in. Keeping the skin on and bone in helps with keeping the breasts tender since they are low in fat.
Rosemary Balsamic Marinade with garlic, shallots and lemon (recipe for other two will be talked about and provided))
I like to serve this with Corn polenta to soak up the juices. Polenta can be made several ways, like a casserole dish or purchased in a ready make log to be fried in a little butter and oil to create a crispy crust around the edges. We’ll be making a polenta casserole with green pepper, green chilies, and cheese. What I love about this casserole is you can doctor it up to go with most any dish…..and it is great the next day…..reheat and serve with your eggs in the morning.
