I love Italian food, all the different regions of Italy have their own specialty dish, sauce, pasta shape, wine and its all mouth watering delicious. Â Saltimbocca is from the Lazio region of Italy where the city of Rome is located. Â The word Saltimbocca literally means ‘Jump-in-the-mouth’….no doubt the umami flavor of Sage, the salt of the prosciutto, and the sweet grapes from wine are what JUMP on ones palate with surprise.
Chicken breast wrapped in sage and prosciutto sautéed in white wine and chicken broth.
Risotto with Cremini Mushrooms
Served with a fall salad of greens, squash, feta cheese and a sweet vinaigrette.
